SWEET VALENTINES DESSERT


I wanted to surprise my sweetie for Valentines Day, so I chose one of his favorite desserts, Red Velvet Cake with Cream Cheese Icing. I’ve made this cake so many times as a cake, but this time I wanted cupcakes. I hand piped the chocolate hearts that are on top. This is done by heating semi sweet chocolate in the microwave, filling a pastry bag (you can use a zip lock bag), cutting off the tip and just pipe a heart. I piped 2 doz. hearts, put them in the refrigerator to harden. After I frosted the cupcake, I placed the heart on top.

  1. Preheat the oven to 350 degrees
  2. With an electric mixture, beat the butter until fluffy. Gradually, add the sugar, mixing well. Add the eggs, one at a time and mix thoroughly. Then add vanilla. I add the red food coloring to my buttermilk.
  3. Combine flour, cocoa, and salt
  4. Add flour mixture to butter mixture, alternating with buttermilk. Beat at low speed, beginning and ending with the flour. Once this is mixed. Combine the vinegar and baking soda (this will bubble). Immediately add to batter and hand mix gently until incorporated.
  5. Bake at 350 for 18-20 or until a toothpick comes out clean.
  6. Remove from oven and cool completely before frosting.
Cream Cheese Frosting
  1. With an electric mixer, mix the butter and cream cheese until light and fluffy. On low speed, gradually add the confectioners sugar. Then add the vanilla. If your frosting is too thick, you may need a couple of tablespoons of milk. Beat until you have the correct consistency.
