This is such a simple yet delicious recipe. I used really good flavorful Balsamic Vinegar. I suppose you could use a whole chicken as well. It would be delicious. This could also be served over rice or noodles as it produces so much juice that you don't want to waste. Fresh bread should be handy to sop up the leftovers. Yummy.

Instructions
  1. Drizzle olive oil into the slow cooker. Place chicken breasts on top of oil and season each breast with salt and pepper.
  2. Top chicken breasts with onion slices, garlic, oregano, basil, rosemary, and thyme. Drizzle balsamic vinegar over seasoned breasts and pour tomatoes on top.
  3. Cook in the slow cooker set to High until chicken is no longer pink in the center and the juices run clear, about 4 hours.
Recipe Notes

** I just used Italian Seasoning which has most of these dried herbs.
