I was looking for a nice hearty soup last weekend up in the mountains. I searching online to see if there was any recipes that just reached out to me. There was not one recipe that stood out- not one. Most started with chicken broth or chicken stock. Hey, do you know the difference between stock and broth? Here's the difference-- stock is made from the bones and marrow along with the meat-- much more flavorful. Broth is made from meat. If given a choice, I would use stock when making a soup or stew. However-----I make my on chicken stock. I went to the grocery and pick out all veggies that I liked. So Here's my soup recipe-- so easy. But you can use what ever you want.

Basic Chicken Soup Recipe
Here are the veggies I bought to add but you can add any veggie that you want.

  1. Cook the soup in a large stock pot. I bring the soup to a boil and then turn it down to medium heat. Cook for several hours.
  2. In the meantime- prepare your veggies to be added after the soup is done.
  3. Once the soup is done, about 2 hours, remove the chicken breast. Add the veggies, canned tomatoes, and noodles. (I remove the chicken because I want it to cool so I can remove the meat from the bone and shred it before placing back in soup. ) DELICIOUS
