  1. Be creative-- I used chocolate peanut butter caramels from Fresh Market
To Make the Cake
  1. Heat oven to 325 degrees.
  2. Grease two (2) 9" round cake pans.
  3. Combine butter and milk in a small saucepan. Cook over low heat until the butter has melted. Stir well and cool to room temperature.
  4. While cooling, Combine flour,baking powder, and salt in bowl. Whisk with fork to combine. In a large bowl, combine eggs, sugar. Beat well at high speed until light yellow, smooth and thick ( this is called the ribbon method).
  5. Stir the flour mixture into the egg mixture, mixing only until the flour disappears. Add cooled milk mixture and the vanilla. Stir all and divide between prepared pans.
  6. Bake at 325 degrees for 20-30 min. until cakes are a pale golden yellow and toothpick comes out clean. Cool for in pan for 10 min. On cooling rack. Then turn out onto wire rack completely.
To Make the Caramel Frosting
  1. Make sure your cake layers are ready. The frosting needs to be quickly applied to layers quickly while the frosting is warm.
  2. In a heavy saucepan, combine brown sugar, evaporated milk, and vanilla. Bring to boil over medium high heat. Stir well and adjust the heat so that the frosting boils and bubbles gently. Cook for 7 min. Remove from heat and let cool for 5 min.
  3. Beat the warm icing with wooden spoon until thickens (2-3 min). Place a cake layer, top side down on cake stand. Spread some icing quickly over the cake layer. Place second cake layer on top of icing. Cover the second layer and sides with caramel frosting.
  4. If the icing becomes too hard and cool and you can't spread it, warm over low heat and add 1-2 spoonfuls of evaporated milk. Scrape bottom and sides stirring well until the frosting softens enough to spread again.
Recipe Notes

Helpful hint:  dip your spreading knife in hot water to help soften and smooth out frosting.
