Boy, that recipe is a mouthful, right? However, this recipe may sound difficult, but it is very simple and yet delicious!! I put all these ingredients in the crockpot or a slow cooker and forget about it. This recipe has fragrant and fruity flavors. I found this recipe online and have made this so many times. The great thing about this recipe is that you can really make it your own. You can add little or a lot of spice. You can add or subtract ingredients. I think the apricots add so much to this dish. Serve this with couscous and pita. Your family will love it.

Instructions
  1. Heat up olive oil in frying pan/skillet and sauté chopped onions and garlic for 5-10 min.
  2. Add chicken stock & gradually mix flour until well mixed and not lumpy. Add honey and tomato paste and mix well.
  3. Add herbs, spices and finely chopped ginger with S&P to taste.
  4. Finally add tomatoes & mix well
  5. Pour the above tomato, onion & spice mixture into slow cooker or crockpot
  6. Add chicken and chickpeas and mix well
  7. Add dried apricot making sure they are covered by juice
  8. Give a gentle mix
  9. Cook on high 3-4 hours
  10. Serve with fresh cilantro.
