I have been making this delicious cake for about 7 years. I found this recipe online when I was looking for a cake for the holidays. It is so delicious that my husband looks forward to this at least twice a year. If I have left overs, I freeze them.

I have been making this delicious cake for about 7 years. I found this recipe online when I was looking for a cake for the holidays. It is so delicious that my husband looks forward to this at least twice a year. If I have left overs, I freeze them.
Instructions
  1. Place oven rack to lower third of oven and preheat to 350 degrees. Grease or spray 10" tube pan well.
  2. Peel, quarter and core apples. Slice to 1/4" thick. Place in bowl with honey and cinnamon. Toss to coat and set aside.
  3. In a mixing bowl with electric mixer on low speed, mix flour, sugar, oil,eggs, juice, baking powder, vanilla, and salt until combined.
  4. Increase speed to moderately high and mix until well blended (about 2 min.)
  5. Pour 1/3 of batter in to prepared pan. Arrange 1/3 of apple slices over the batter and sprinkle with chopped nuts if desired. Cover with 1/2 of remaining batter. Arrange 1/2 remaining apples over batter. Top with remaining batter evenly. Top with remaining apples. Overlap the apples around the pan like petals. You can pour the remaining juice over the apples if you would like.
  6. Bake cake for 80-90 minutes or until toothpick or skewer comes out clean. If the top gets too brown, loosely cover with foil. Remove from oven and cool for 10 min. You may need togo around inside edges of pan with knife and remove sides of pan. Carefully lift the cake from pan and bottom onto serving plate.
  7. Cake may be stored covered at room temp. Or up to 2 days frozen.
